The average age of the olive trees is about 60 years including some magnificent specimens of more than 350 years. Cultivation follows the traditional olive standards, adapted and modernized with low intervention techniques and always looking for an absolute environmental respect. Ethical & sustainable farming is observed through with differential management in plots, substantial welfare for workers, enhanced relations with openness & no boundaries.
Tasting Notes: Intense fruity oil, tangy & robust - One reminds of green olives and ripe apple contrasting with the green notes of plants, bark, grass, artichoke accompanied by an asparagus touch, green walnut and aromatics. The first confirms the greenery sensations in the nose with its fluid & smooth. Quite bitter at first, flows into moderation, then lightness and yet sharp after. The spiciness strolls in a little later, growing in intensity working its way up a longer journey. This is an olive oil that unites flavours with lasting intensity, fresh complexities and continuous novel dimensions.
